Spinach: Loaded with more potassium than a banana, this powerful green provides high amounts of non-heme iron, calcium and magnesium, vitamins K, C and A.
Carrot: Carrots are high in carotenoids, like alpha and beta-carotene. These antioxidant compounds protect cells throughout the body and convert in the liver to make Vitamin A. Lutein and zeaxanthin are 2 of these compounds, known for their eye protective qualities.
Cabbage: Cabbages contain phytochemicals called indoles which protect us from carcinogens and toxins. Another potent phytochemical found is sulforaphane, which produce a potent phase-2 enzyme which “disarms” and fights free radicals.
